
Juicy, seared steak bites and golden potatoes tossed in rich garlic butter—an easy one-pan dinner full of comfort and flavor.
Ingredients
- 1 ½ lbs sirloin steak (or ribeye), cut into bite-sized cubes
- 1 ½ lbs baby potatoes, halved
- 3 tbsp olive oil, divided
- 4 tbsp unsalted butter
- 4 garlic cloves, minced
- 1 tsp dried thyme (or 1 tbsp fresh)
- 1 tsp dried rosemary (or 1 tbsp fresh)
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the Potatoes:
Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add potatoes, season with salt and pepper, and cook for 12–15 minutes, stirring occasionally, until golden and fork-tender. Transfer to a plate and set aside. - Sear the Steak:
In the same skillet, add 1 tbsp olive oil. Add steak cubes in a single layer, season with salt and pepper, and sear for 2–3 minutes per side until browned and cooked to your liking. Remove from skillet. - Make Garlic Butter Sauce:
Reduce heat to medium. Add butter, garlic, thyme, and rosemary to the skillet. Stir until fragrant, about 1 minute. - Combine:
Return the potatoes and steak to the skillet. Toss everything in the garlic butter until well coated. - Serve:
Garnish with chopped parsley and serve hot.
Tip: For extra richness, finish with a squeeze of lemon juice or a sprinkle of Parmesan cheese before serving.
