Stuffed Potato Pancakes with Cheesy Beef Filling

Crispy golden potato pancakes hiding a savory surprise – juicy seasoned beef and melted cheese in every bite!

Ingredients

For the Potato Pancakes

  • 4 large russet potatoes (about 2 lbs/900g), peeled
  • 1 small onion
  • 1 egg
  • 3 tbsp all-purpose flour
  • ½ tsp salt
  • ¼ tsp black pepper
  • Oil for frying (vegetable or sunflower)

For the Cheesy Beef Filling

  • ½ lb (225g) ground beef
  • ½ small onion, finely diced
  • 1 garlic clove, minced
  • ½ tsp paprika
  • ½ tsp dried oregano
  • ¼ tsp cumin
  • ½ cup shredded cheddar cheese
  • Salt & pepper to taste

For Serving

  • Sour cream
  • Chopped chives or green onions

Instructions

1. Prepare the Filling

  1. Brown beef in skillet over medium heat, breaking it apart.
  2. Add diced onion and garlic; cook until soft (3-4 mins).
  3. Stir in spices, season to taste, then mix in cheese. Let cool.

2. Make Potato Mixture

  1. Grate potatoes and onion on the large holes of a box grater.
  2. Place in clean kitchen towel and squeeze out excess liquid.
  3. Mix with egg, flour, salt, and pepper in a bowl.

3. Assemble & Fry

  1. Take ¼ cup potato mixture, flatten in your palm.
  2. Place 1 tbsp filling in center, enclose completely.
  3. Flatten gently to ½-inch thick patties.
  4. Fry in hot oil (350°F/175°C) 3-4 mins per side until golden.

4. Serve

Drain on paper towels and serve hot with sour cream and chives.
