
Crispy golden potato pancakes hiding a savory surprise – juicy seasoned beef and melted cheese in every bite!

Ingredients
For the Potato Pancakes
- 4 large russet potatoes (about 2 lbs/900g), peeled
- 1 small onion
- 1 egg
- 3 tbsp all-purpose flour
- ½ tsp salt
- ¼ tsp black pepper
- Oil for frying (vegetable or sunflower)
For the Cheesy Beef Filling
- ½ lb (225g) ground beef
- ½ small onion, finely diced
- 1 garlic clove, minced
- ½ tsp paprika
- ½ tsp dried oregano
- ¼ tsp cumin
- ½ cup shredded cheddar cheese
- Salt & pepper to taste
For Serving
- Sour cream
- Chopped chives or green onions
Instructions
1. Prepare the Filling
- Brown beef in skillet over medium heat, breaking it apart.
- Add diced onion and garlic; cook until soft (3-4 mins).
- Stir in spices, season to taste, then mix in cheese. Let cool.
2. Make Potato Mixture
- Grate potatoes and onion on the large holes of a box grater.
- Place in clean kitchen towel and squeeze out excess liquid.
- Mix with egg, flour, salt, and pepper in a bowl.
3. Assemble & Fry
- Take ¼ cup potato mixture, flatten in your palm.
- Place 1 tbsp filling in center, enclose completely.
- Flatten gently to ½-inch thick patties.
- Fry in hot oil (350°F/175°C) 3-4 mins per side until golden.
4. Serve
Drain on paper towels and serve hot with sour cream and chives.
