Ingredients

For the Dip

  • ½ cup high-quality extra virgin olive oil
  • ¼ cup finely chopped sun-dried tomatoes (oil-packed)
  • 2 garlic cloves, minced
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh parsley, finely chopped
  • 1 tsp red pepper flakes (adjust to taste)
  • ½ tsp dried oregano
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • 1 tbsp sun-dried tomato oil (from the jar)
  • 1 tsp balsamic vinegar

For Serving

  • 1 loaf crusty bread (baguette, ciabatta, or sourdough)
  • Optional: Grated Parmesan or crumbled feta

Instructions

1. Prepare the Dip

  1. In a small bowl, combine olive oil, sun-dried tomatoes, garlic, rosemary, parsley, red pepper flakes, oregano, salt, and black pepper.
  2. Stir in the sun-dried tomato oil and balsamic vinegar.
  3. Let the mixture sit at room temperature for at least 30 minutes to allow flavors to develop.

2. Serve

  1. Pour the dip into a shallow serving dish.
  2. Serve with warm, crusty bread for dipping.
  3. Optionally, sprinkle with Parmesan or feta for extra richness.
