Sweet Onion and Goat Cheese Tarts with Thyme

Buttery puff pastry topped with caramelized onions, creamy goat cheese, and fragrant thyme – an elegant appetizer or light meal.

Ingredients

For the Tarts

  • 1 sheet puff pastry, thawed
  • 2 large sweet onions (Vidalia or Walla Walla), thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp brown sugar
  • 4 oz goat cheese, crumbled
  • 1 tbsp fresh thyme leaves
  • 1 egg, beaten (for egg wash)
  • Salt and pepper to taste

For Garnish

  • Honey drizzle
  • Extra thyme sprigs

Instructions

1. Caramelize the Onions

  1. Melt butter and olive oil in a large skillet over medium-low heat.
  2. Add sliced onions, brown sugar, and a pinch of salt.
  3. Cook slowly for 20-25 minutes, stirring occasionally, until deeply golden and sweet.

2. Prepare the Pastry

  1. Preheat oven to 400°F (200°C).
  2. Roll out puff pastry slightly and cut into 6 rectangles.
  3. Score a ½-inch border around each rectangle (don’t cut all the way through).
  4. Brush edges with egg wash.

3. Assemble & Bake

  1. Spread caramelized onions within the borders of each pastry.
  2. Top with crumbled goat cheese and thyme leaves.
  3. Bake for 15-18 minutes until puffed and golden.

4. Finish & Serve

  1. Drizzle with honey and garnish with fresh thyme.
  2. Serve warm as an appetizer or with a green salad for lunch.

Tips

  • Make ahead: Onions can be caramelized 2 days in advance.
  • Try adding chopped walnuts for crunch.
