Ingredients
For the Tarts
- 1 sheet puff pastry, thawed
- 2 large sweet onions (Vidalia or Walla Walla), thinly sliced
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tsp brown sugar
- 4 oz goat cheese, crumbled
- 1 tbsp fresh thyme leaves
- 1 egg, beaten (for egg wash)
- Salt and pepper to taste
For Garnish
- Honey drizzle
- Extra thyme sprigs
Instructions
1. Caramelize the Onions
- Melt butter and olive oil in a large skillet over medium-low heat.
- Add sliced onions, brown sugar, and a pinch of salt.
- Cook slowly for 20-25 minutes, stirring occasionally, until deeply golden and sweet.
2. Prepare the Pastry
- Preheat oven to 400°F (200°C).
- Roll out puff pastry slightly and cut into 6 rectangles.
- Score a ½-inch border around each rectangle (don’t cut all the way through).
- Brush edges with egg wash.
3. Assemble & Bake
- Spread caramelized onions within the borders of each pastry.
- Top with crumbled goat cheese and thyme leaves.
- Bake for 15-18 minutes until puffed and golden.
4. Finish & Serve
- Drizzle with honey and garnish with fresh thyme.
- Serve warm as an appetizer or with a green salad for lunch.

- Make ahead: Onions can be caramelized 2 days in advance.
