Golden Onion Butter Rice

Sweet caramelized onions folded into buttery, fluffy rice for a simple yet luxurious side dish.

Ingredients

  • 1 ½ cups long-grain white rice (jasmine or basmati work well)
  • 2 large yellow onions, thinly sliced
  • 3 tbsp unsalted butter (divided)
  • 1 tbsp olive oil
  • 2 ¼ cups chicken or vegetable broth
  • ½ tsp sugar
  • ½ tsp salt (plus more to taste)
  • 1 bay leaf (optional)
  • Fresh parsley or chives, chopped (for garnish)

Instructions

1. Caramelize the Onions

  1. In a large skillet or pot, melt 1 tbsp butter + 1 tbsp olive oil over medium-low heat.
  2. Add the sliced onions, sugar, and salt. Cook slowly for 20-25 minutes, stirring occasionally, until deep golden brown.

2. Cook the Rice

  1. Rinse the rice until the water runs clear (to remove excess starch).
  2. Push the onions to one side of the pan, melt the remaining 2 tbsp butter, and add the rice. Toast for 1-2 minutes.
  3. Pour in the broth, add the bay leaf (if using), and stir everything together.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes (or until liquid is absorbed).

3. Rest & Serve

  1. Remove from heat and let sit, covered, for 5 minutes.
  2. Fluff with a fork, adjust seasoning if needed, and garnish with fresh herbs.
