Mashed Potato Cheese Puffs

Ingredients

For the Puffs

  • 2 cups mashed potatoes (leftover or freshly made, chilled)
  • 1 cup shredded cheese (cheddar, mozzarella, or Gruyère work well)
  • ¼ cup grated Parmesan cheese
  • 1 large egg, beaten
  • 2 tbsp chopped chives or green onions
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt & black pepper, to taste

For the Coating

  • 1 cup panko breadcrumbs (or regular breadcrumbs)
  • ½ cup grated Parmesan cheese
  • ½ tsp paprika (optional, for color & flavor)
  • Oil spray (or melted butter, for brushing)

Instructions

1. Preheat & Prep

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix mashed potatoes, shredded cheese, Parmesan, egg, chives, garlic powder, onion powder, salt, and pepper until well combined.

2. Shape the Puffs

  1. Scoop about 2 tbsp of the mixture and roll into a ball (if too sticky, wet hands lightly).
  2. In a separate bowl, mix panko, Parmesan, and paprika.
  3. Roll each potato ball in the breadcrumb mixture, pressing gently to coat.

3. Bake Until Golden

  1. Place the coated puffs on the baking sheet.
  2. Lightly spray with oil or brush with melted butter for extra crispiness.
  3. Bake for 20-25 minutes, until golden and crispy.

4. Serve & Enjoy!

  1. Let cool slightly, then serve warm with sour cream, ranch, or spicy mayo for dipping.
