Ingredients

- 2 cups mashed potatoes (leftover or freshly made, chilled)
- 1 cup shredded cheese (cheddar, mozzarella, or Gruyère work well)
- ¼ cup grated Parmesan cheese
- 1 large egg, beaten
- 2 tbsp chopped chives or green onions
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt & black pepper, to taste
For the Coating
- 1 cup panko breadcrumbs (or regular breadcrumbs)
- ½ cup grated Parmesan cheese
- ½ tsp paprika (optional, for color & flavor)
- Oil spray (or melted butter, for brushing)
Instructions
1. Preheat & Prep
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, mix mashed potatoes, shredded cheese, Parmesan, egg, chives, garlic powder, onion powder, salt, and pepper until well combined.
2. Shape the Puffs
- Scoop about 2 tbsp of the mixture and roll into a ball (if too sticky, wet hands lightly).
- In a separate bowl, mix panko, Parmesan, and paprika.
- Roll each potato ball in the breadcrumb mixture, pressing gently to coat.
3. Bake Until Golden
- Place the coated puffs on the baking sheet.
- Lightly spray with oil or brush with melted butter for extra crispiness.
- Bake for 20-25 minutes, until golden and crispy.
