A delightful combination of crunchy, golden chicken and rich, creamy pasta—perfect for a comforting dinner!
Ingredients
For the Crispy Chicken:
4 boneless, skinless chicken breasts
1 cup breadcrumbs
½ cup grated Parmesan cheese
1 tsp garlic powder
1 tsp paprika
2 eggs, beaten
Salt and pepper, to taste
Olive oil, for frying
For the Creamy Pasta:
8 oz pasta (penne or fettuccine recommended)
1 cup heavy cream
½ cup grated Parmesan cheese
3 cloves garlic, minced
2 tbsp butter
Salt and pepper, to taste
Fresh parsley, for garnish
Directions
Prepare the Breadcrumb Mixture:
In a medium bowl, mix together breadcrumbs, grated Parmesan, garlic powder, paprika, salt, and pepper.
Bread the Chicken:
Dip each chicken breast into the beaten eggs, ensuring an even coating.
Press the chicken firmly into the breadcrumb mixture to coat it thoroughly.
Fry the Chicken:
Heat a generous layer of olive oil in a large skillet over medium heat.
Add the breaded chicken and fry for 5-6 minutes per side until crispy, golden brown, and fully cooked (internal temperature should reach 165°F).
Remove and place on a plate lined with paper towels to absorb excess oil.
Cook the Pasta:
Bring a large pot of salted water to a boil and cook the pasta according to package directions.
Drain the pasta and set aside.
Make the Creamy Sauce:
Melt the butter in a large pan over medium heat.
Add the minced garlic and sauté for 1-2 minutes until fragrant.
Pour in the heavy cream and bring to a gentle simmer.
Stir in the Parmesan cheese, allowing it to melt and thicken the sauce (2-3 minutes).
Season with salt and pepper to taste.
Combine Pasta and Sauce:
Add the cooked pasta to the creamy sauce, tossing to coat evenly.
Serve:
Plate the creamy pasta and top with the crispy chicken.
Garnish with fresh parsley for a pop of color and flavor.
Optional Tips:
Add a squeeze of lemon to the chicken for brightness.
For extra flavor, sprinkle red pepper flakes into the sauce.
Pair with a side of roasted vegetables or garlic bread.
Enjoy your indulgent, restaurant-style dinner!
