Looking for an easy to make, low-point breakfast? You might want to consider our new favorite breakfast – Low-Point Banana Pancakes. Lightly sweet and nutritious, the
pancakes only require egg whites, bananas, and oats along with a couple of standard pantry items. You can easily create a fluffy, healthy breakfast treat with this recipe for Low-Point Banana Pancakes. An entire batch is three points for about seven pancakes, or half the batch is two points. The points are from the 1/3 cup of dry oatmeal. The rest of the ingredients are zero points. (We tried cooking these without the oatmeal, but the pancakes were difficult to flip and were not as pancake-like.)

Ingredients
- 1 Banana ripe and mashed well with the back of a fork
- 2 Large egg whites
- ½ tsp. Vanilla extract
- 1 tsp. Baking powder
- Pinch of cinnamon
- Pinch of nutmeg
- Optional toppings including sugar free whipped cream and berries
Instructions
- Place the mashed banana into a food processor or blender.
- Add the remaining ingredients to the food processor or blender, and pulse until smooth and well combined.
- Heat a griddle or skillet.
- Pour the batter into four equal pancakes, and cook evenly on both sides until done.
- Top pancakes with sugar-free whipped cream and berries if desired.
